01 - Line a baking sheet with parchment paper and set aside for later use.
02 - Peel bananas and cut crosswise into ½ inch thick rounds. Arrange slices in a single layer on the prepared baking sheet.
03 - Place baking sheet in freezer for at least 30 minutes until banana slices are firm to the touch.
04 - Combine chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until completely smooth. Alternatively, melt over a double boiler.
05 - Using a fork or toothpick, dip each frozen banana slice into melted chocolate. Lift and allow excess chocolate to drip off.
06 - Place chocolate-covered bites back onto parchment-lined sheet. Immediately sprinkle with desired toppings before chocolate begins to set.
07 - Return tray to freezer for at least 15 minutes until chocolate coating is completely firm.
08 - Serve directly from freezer. Store leftovers in an airtight container in freezer for up to 2 weeks.
