01 - In a small bowl, mix the goat cheese and cream cheese (if using) until smooth and well combined.
02 - Spread the goat cheese mixture evenly onto two slices of bread. Drizzle 1 tbsp honey over each slice. If desired, sprinkle with fresh herbs and layer with greens.
03 - Top with the remaining bread slices to form sandwiches. Butter the outsides of each sandwich generously.
04 - Heat a skillet or griddle over medium heat. Place the sandwiches butter-side down in the skillet. Cook for 3-4 minutes until golden and crisp.
05 - Flip carefully and cook the other side for another 3-4 minutes, pressing gently with a spatula, until golden brown and cheese is melted.
06 - Remove from heat, slice diagonally, and serve warm.
