Spring Pea Soup Turkey Ham (Print)

# How-To Steps:

01 - Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
02 - Add diced potatoes to the pot and cook for 2 minutes, stirring occasionally. Pour in broth and bring to a gentle boil. Reduce heat, cover, and simmer for 10 minutes until potatoes begin to soften.
03 - Add peas and half of the diced turkey ham to the pot. Simmer for 5 to 8 minutes until peas and potatoes are completely tender.
04 - Remove from heat. Add mint leaves if using. Puree soup until smooth using an immersion blender, or work in batches with a countertop blender.
05 - Stir in heavy cream if using, then season with salt and pepper to taste. Ladle soup into bowls and top each serving with remaining diced turkey ham. Serve hot.
