01 - Combine cranberries, orange juice, sugar, orange zest, and salt in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Cook for 10 minutes until cranberries burst and sauce thickens. Remove from heat and cool completely.
02 - Combine ground turkey, onion, garlic, egg, breadcrumbs, Dijon mustard, parsley, salt, and pepper in a large bowl. Mix gently until just combined, being careful not to overwork the meat.
03 - Divide the turkey mixture into 4 equal portions. Shape each portion into a uniform patty, about 3/4 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.
04 - Heat olive oil in a large skillet over medium heat. Add patties and cook for 5-6 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F. Do not press down on burgers while cooking.
05 - Lightly toast burger buns in the skillet or under a broiler for 1-2 minutes until golden and crisp. This helps prevent soggy burgers.
06 - Place lettuce on the bottom bun, add the cooked turkey patty, and top with a generous spoonful of cranberry sauce. Layer with red onion slices and tomato. Place the top bun and serve immediately.
